With about seven years of services provided, Cerveja Avós stands out as a reference in Brazil when it comes to craft lager beers, a delicious island in the middle of the ocean dedicated to ales, mainly india pale ales and their variations.
However, Cool, the new series that Junior Bottura’s brewery launches on the market, plays a little by exploring the concepts of lagers (low fermentation beers) and ales (top fermentation).
There are three new recipes, Cool IPA, Cool Pils and Cool APL. The inspiration came from the recent North American hype (always them) with what they named Cold IPA. They are refreshing beers, lighter than traditional ales and easy to drink, but they are not india pale ales, but india pale lagers.
As a rule, lagers are fermented at lower temperatures. In the case of Cold IPA, this temperature rises a little, but not enough to put it on the ale team. Almost half way.
According to Bottura, the Cool line brings “extremely fresh and very round beers, with balanced bitterness and very easy to drink”, he warns. “We don’t leave aside our desire to talk about styles that appear to be new, in this case, we changed the word Cold to Cool. In addition to the Cool IPA, the Cool APL (American pale lager) mixes bitterness with a slight sweetness, courtesy of the malts used. Cool Pils is refreshing like a good premium lager, “light, unpretentious and full of flavor”, says Bottura.
The three novelties are available on draft beer, freshly brewed, at Casa Avós, or at partner breweries.
