Schaffer curds – Padaria América

This is the story in which two iconic protagonists come together: In 2012, Padaria América, a Trajano Reis classic since 1913 with its rye breads and cornbread, acquires the recipe and preparation method for Coalhadas Schaffer, created in 1912 with the Leiteria Schaffer, on XV de Novembro. Today, the dairy product is sold in several locations around the city, but in America it follows the traditional custom of serving it in ceramic pots.

The bar that generates queues at lunch on the weekends has been under the command of Manoel Pereira Alves, Maneko, for 39 years, but only got its name in 1988, along with its current address. The restaurant’s signature dish is the steak parmigiana, made from the recipe of a former regular, Professor Mário Branco, who passed away in 2015.

Founded in 1991 by father and son, initially the bar was also the neighborhood grocery store. Traditional family recipes and classics from bar cuisine are the house’s biggest hits. The meat dumpling, a classic of Curitiba’s traditional cuisine, is made with Dona Romilda’s recipe and gave rise to bread with dumplings, one of the highlights of the place. The jaguar meat attracts visitors due to its seasoning and freshness. In the week’s specials, there’s pastry on Monday and ham sandwich on Wednesday.
