That’s what the committees of the Good Gourmet Award seek to achieve in its 13th edition, presented by Gold Food Service. Getting closer and closer to knowing the winners of the Prize, which this year again listed the best in different categories, we present you with each of the decision committees and their criteria.

“The Prize mixes the favorites of consumers in general, through Sabor Popular [parte do Prêmio formada por indicações e votação do público], with the opinion of specialists in gastronomy and opinion makers, through the Committees and the Specialties stage. Thus, we have the most complete range of options possible in Curitiba and region”, comments the Head of Pinó Shore, Aline Radominski. While the popular vote takes place — from June 27th to July 11th — the committees meet to reach a verdict on their champions.

All the champions, including those of the Gourmet Award committees, will be announced on the day August 28thwhen the award party is held.

Good Gourmet Committee

It seeks to honor and award establishments, dishes, professionals and gastronomic initiatives in seven categories, all based on the votes of judges recognized as experts in the field. They come together to come up with the names of the champions of the year. In 2023, the categories are News, Restauranteur, Sommelier, Honorees of 2023, To keep an eye on, Sustainable Gastronomic Business and Erasto Gaertner Category.

“We want to put prominent names in the city’s gastronomy under the spotlight. Award and highlight those who played an important role in the local scenario. It will certainly be a memorable moment for everyone involved”, says Caroline Olinda, Head and editor of Good Gourmet.

The last two are new to the Prize. In partnership with Composite+ and feeling the need to exalt enterprises that are concerned with sustainability linked to their activities, the organization will bring together a special group of judges to evaluate cases of sustainability in gastronomic businesses suggested by the Paraná section of Abrasel (Brazilian Association of Bars and Restaurants) and by Sebrae-PR, forming the Sustainable Gastronomic Business category. Environmental impact, innovation, culture and ease of replicating the action will be factors analyzed by the panel of judges to arrive at the big winner.

already the Category Erasto Gaertner there was a preparatory period before the evaluation of the chefs involved. Selected cooks from the city were invited to participate in a workshop given by specialists from the hospital and, thus, learned how food is designed on site in order to maximize nutrients during meal preparation. From this learning, they are creating dishes that unite health and flavor and will be served to a panel of judges.

The judges will evaluate the dishes in the dark – without knowing who the chef is responsible for the preparation – to elect the best. In the evaluation criteria, not only the execution will be analyzed, but also the fulfillment of the health proposal of the Erasto hospital’s nutrition service.

HAUS Ambiance Committee

Another of the 2023 Bom Gourmet Award committees is Haus Ambientação. This year, the judges will evaluate the architecture and designer proposal of the nominees in the Novelties category of the Bom Gourmet Committee. At this stage of the awards, a group formed by architects and designers will choose the great champion from the point of view of decoration and architectural proposal.

To arrive at the verdict, the judges will take into account the execution of the proposal and how the environment proposes to serve the public in terms of functionality, circulation and aesthetics. The concepts of design, art and architecture in the conception of spaces will also be evaluated by the jury. In addition, dialogue and respect for the architecture of the property, the proper use of design pieces and works of art, lighting, layout, concept and presentation are other criteria considered.

The Popular Flavor stage also featured a new and special category: the Gastronomy that Transforms, which is part of the institutional partnership between Bom Gouret and Clube da Alice, largest virtual community of female entrepreneurship in Paraná. Club members submitted their food businesses and an evaluation committee selected the best stories thinking about innovation, inspiration and economic and social impact.

The five finalist establishments go to the popular voting phase, which takes place from June 27th to July 11th on the website premiobomgourmet.com.br. Thus, the people are the ones who will decide who is the big winner in this category!
