Sushi Day is celebrated in Japan on November 1st, an event created around two decades ago. Brazilians like the delicacy so much that they adopted the date here. The dish is also celebrated on June 18th, the day that marks Japanese immigration to Brazil.

Sushi is traditionally made with some type of raw fish or seafood on a handful of rice seasoned with a sauce of vinegar, salt and sugar.

The recipe has different versions in Japanese restaurants in the capital of São Paulo, offered in individual pieces, combined or in a rotation format. Find out where to eat sushi at the 15 addresses below.

Aima
From the sushi bar of the Japanese restaurant, inside the Iguatemi shopping mall, there are around 30 elaborate sushi options, such as that made with haddock, sea bass with karasumi, eel, bijupira (a type of fish) with truffled honey, tuna with foie gras, centolla and octopus.

Geiko San
Restaurante Davide Bernacca, from the Bernacca group, has just taken over the operation of the Japanese cuisine location. Chef Walber sits at the counter and prepares sushi options, which are sold individually, such as tuna with foie gras (R$36), black cod (R$25), horse mackerel (R$15), sea bass (R$16 ), octopus with asparagus (R$ 21) and bluefin toro (R$ 50).

Goya Sushi
The restaurant has classic Japanese cuisine, which emphasizes the preparation and presentation of the dishes. The ten-step omakassê (R$490) always has a trio of nigiri sushi, and a futomaki, which is a thicker version of rolled sushi, with more ingredients.

Kitchen
In the sushi section, versions made from sea bass, salmon, snapper and scallop, among others, are listed. To celebrate Sushi Day, on November 6th, the restaurant offers a dinner prepared by chef André Nobuyuki Kawai. He guides the opening ceremony for bluefin, a rare type of tuna. The piece and other creations will be served in a tasting menu on the date for R$450.

Noma Sushi
With a modern decor, the Japanese restaurant offers several pieces of sushi, such as the duo of salmon belly nigiri with crispy scallop sealed in truffle butter and fleur de sel, for R$52, and the foie gras topped with lychee taré and fleur de sel, for R$44.

Nosu
The Nosu 7+1 combo, with seven chef’s sushis and one more to choose from, to repeat, includes several truffled sushis (R$ 143). Composed of carpaccio, sashimi, sushi, tempura and dessert, the tasting menu costs R$ 275. There is also single sushi, such as seared tuna (R$ 17) and sole (R$ 15).

Oguru Sushi Bar
It offers all-you-can-eat Japanese food at five locations in the city — Jardins has just moved to a larger space. Among the varieties of sushi that make up it are Hokkigai nigiri, squid with truffled parsley and roe and salmon belly torched with fleur de sel and lemon zest. The complete carvery, with starters, hot dishes, sushi, sashimi, temakis, carpaccios and desserts, costs R$179.

Sassá Sushi
The restaurant run by chef Alexandre Sabe completed 20 years with new features on the menu. Suggestions for the date include the Tokio menu, for R$250, consisting of four starters, two hot dishes and two courses of special sushi.

Shin-Zushi
Based on the freshest fish of the day, such as roe and shrimp, the tokujo zushi combo costs R$ 210. In the tirashi zushi, prime raw and cooked fish are placed on sushi rice, with slices of tamago (omelet), shrimp , roe and wasabi for R$270.

Sushi Hiroshi
A traditional address in the north zone, frequented by residents of the neighborhood, sushi chef Julio Hiroshi’s place stands out for its cold cuisine. With 16 pieces, the simple sushi combo costs R$100.

Sushi Kenzo
Takashi Okuno’s family restaurant works with a menu dedicated exclusively to traditional Japanese sushi. For two people, the sakura combo (R$620) features 20 sashimis, a variety of fish sushi, including tobiko roe, two shrimp or octopus niguiris, two scallop sushi, 12 hossomakis and eight uramakis.

Susume
He is the representative of Japanese cuisine at the Vila Anália gastronomic complex. In addition to hot dishes, sushi chef Kazuo Ozaki’s restaurant offers a sushi menu. One of the most popular is the one with tuna, foie gras, fried quail yolk, fleur de sel and truffle oil, served on a spoon (R$80 for a pair). The combo with 12 varied sushi and 2 urakamis costs R$75.

Yu Restaurant
