When hot cheese meets kimchi, a Korean preserve, a surprising union is reached. You can use any type of bread, but choosing a soft, fluffy variety like brioche or sour bread will ensure that the center of the sandwich is super creamy.

The trickiest part of the recipe is getting the cheese to melt before the toast gets too golden, but firm cheeses like cheddar or Monterey Jack work (you can also try semi-cured and cured cheese).

Mixing grated cheese with kimchi helps the melting to become faster and more uniform — cooking over low heat and covering with a lid slows down the process of turning the surface of the bread golden.

If you notice that the outside of your toast is turning dark before the cheese melts, simply place the sandwich in a 350°F oven (you can also do this to keep your sandwich warm if you’re making more than one).

Ingredients

  • 1 large egg
  • ½ teaspoon soy sauce or ¼ teaspoon salt
  • 1 chive, cut into thin slices
  • Black pepper
  • ⅓ cup kimchi, drained and coarsely chopped (approximately 70 g)
  • ¼ cup (tea) grated cheddar (you can also try it with semi-cured or plate cheese)
  • 2 slices of soft white bread, preferably brioche or sourdough
  • ½ tablespoon unsalted butter

Method of preparation

  1. In a medium shallow bowl, place the egg and soy sauce and whisk until completely smooth. Add the spring onions and a few pinches of black pepper and mix well.

  2. In a small bowl, combine the kimchi and grated cheese (chop the cheese if using in slices)

  3. Place the two slices of bread on a cutting board and add the kimchi and cheese mixture to one of them. Place the other slice of bread on top to assemble the sandwich.

  4. Dip one side of the sandwich into the egg mixture and leave for 30 seconds. Carefully flip the sandwich over (making sure the filling doesn’t fall out) and leave the other side in the egg mixture while you prepare the pan.

  5. Heat a medium nonstick skillet over medium heat for 1 to 2 minutes until hot. Add the butter and swirl to melt. Place the sandwich in the frying pan, cover with a lid and cook for 2 minutes until golden. Turn to cook the other side, covering with a lid and leaving for 2 to 3 minutes, until the bread is golden and the cheese is melted.

  6. Cut in half and eat while it’s hot.
