A typical dish in eastern Italy, ascolane is a stuffed olive that serves as a starter for meals. In the capital of São Paulo, it is offered in Italian restaurants such as Antipasti Amici, in Vila Mariana.
The original recipe is filled with meat, but the appetizer got a makeover at Amici: it is filled with ricotta and parmesan, breaded in artisanal bread flour and fried in hot oil. Find out how to prepare it at home below.
OLIVE ASCOLANE
Performance: 12 units
Preparation time: 35 minutes
Ingredients
- 12 pitted green olives
- 100 g of ricotta
- 25 g of grated parmesan
- 1 egg
- 20 g of wheat flour
- 20 g of breadcrumbs
- 500 ml of oil
Method of preparation
- Mix the ricotta and grated parmesan, reserving some of the parmesan for later
- Fill each of the olives with the mixture using a dessert or tea spoon.
- Break the egg and beat well with a fork, adding a little parmesan to season.
- Dust with wheat and breadcrumbs and egg
- Fry in hot oil until golden
