Cheese bread, a good option for breakfast and snacks, has an easy version made in a blender by chef Heloisa Bacellar.
Versatile, this preparation can even be baked in pans, in an aluminum toaster or iron and even in a waffle maker.
The list of ingredients is simple: sweet cassava starch, milk, oil, egg and cured Minas Gerais cheese or grated parmesan — you can also use good quality grated packaged cheese.
The egg gives flavor and structure to the cheese bread (if it’s free-range, the better). Oil is essential for the texture: too little, the dough becomes hard and dry, and too much makes it greasy. The tip is to choose corn or sunflower oil, which are neutral, says Helô Bacellar.
Sweet cassava starch has a more delicate flavor and goes well with stronger cheeses that are good for grating. Salt is to taste and depends on the cheese chosen.
Heloisa Bacellar, who writes the blog Na Cozinha da Helô, ran the Lá da Venda restaurant, which operated for 11 years in Vila Madalena, in São Paulo.

Ingredients
- 1 cup of grated Minas Gerais cheese or grated parmesan, or other good grating cheese (100 g)
- 1 egg
- ¾ cup of oil (180 ml)
- 1 cup of milk or water (240 ml)
- 1 and ½ cups of sweet cassava starch (180 g)
- 1 pinch of salt
- Oil for greasing
Method of preparation
- Add the cheese, egg, oil, milk or water, tapioca starch and 1 teaspoon of salt and blend in a blender until you get a smooth, liquid dough (adjust the salt, as each cheese is different) .
Waffle maker: Follow the instructions for your machine. Adjust to get evenly golden and crispy waffles, grease the cavities with oil, fill the bottom cavity, close and wait for the green light or beep to come on. It almost always takes about 5 minutes.
Tostex: Grease the cavities of the iron or aluminum tostex, fill the bottom with dough, close and place over medium heat. Leave it for about 2 minutes on one side, turn it over, leave it for another 2 minutes and open it to look. - Transfer the golden, crispy waffles to a plate and serve immediately.
