Ingredients
- 1 skinless boneless chicken breast
- 1 carrot
- 1 big onion
- 4 celery stalks
- 1 green apple
- 1 bay leaf
- 1/2 cup of raisin tea
- 1/2 cup of walnut tea
- 1/2 cup of green tea
- 1/2 cup diced red bell pepper
- 400 g of mayonnaise
- 3 tablespoons of olive oil
- Salt and black pepper to taste
Preparation
- Divide the chicken breast in half and place in a pan with half the onion and celery cut into medium cubes, the bay leaf and about 1 tablespoon of salt. Cover with water and cook over medium heat for about 40 minutes, until the chicken is very tender.
- Transfer the chicken to a bowl to cool and save the broth to use in another recipe.
- Cut the rest of the onion and celery, the apple and the peppers into small cubes and place in a large bowl. Grate the carrot on a coarse grater and also place in the bowl. Shred the chicken and place in the bowl.
- Add the mayonnaise, the parsley and the chives and a little black pepper, the raisins and the walnuts and stir
- Hit the salt and pepper and take the fridge to freeze for at least 3 hours and up to 8 hours. After 8 hours, the salpicão begins to lose its crispness and release liquid.
- When ready to serve, mix everything again, adjust the salt and pepper and transfer to the bowl in which it will be served at the table.
