Ingredients:

  • 2 tablespoons unsalted butter, plus a little more for greasing the tin.
  • 1 tablespoon of breadcrumbs.
  • 2 cups full of finely sliced ​​mushrooms
  • 1 cup grated cheese, e.g. gruyère, emmenthal or cheddar
  • 1 cup of milk cream
  • 1 cup whole milk
  • 4 lightly beaten eggs
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon freshly grated nutmeg
  • ¼ cup freshly grated Parmesan (about 30 grams)
  • 1 teaspoon finely chopped chives, to serve

Way of doing

  • Preheat the oven to 160ºC with the rack positioned on top
  • Generously butter a 20 cm deep dish, round, square or oval, and cover the bottom very well with breadcrumbs.
  • Heat the 2 tablespoons of butter in a large pan over medium-high heat.
  • When the butter is melted and frothy, add the mushrooms and sauté until lightly browned, about 3 to 5 minutes.
  • Sprinkle the sautéed mushrooms and grated cheese over the breadcrumbs.
  • Whisk together the cream, whole milk, eggs, salt, pepper and nutmeg.
  • Pour the mixture over the grated cheese.
  • Sprinkle the grated Parmesan over the top and bake until golden on top and the cream is more or less set in the center (about 45 minutes).
  • Remove from oven and let cool for five to ten minutes before serving.
  • Distribute the chopped chives on top, cut into slices or remove portions with a spoon, and serve.
