In addition, this type of canned food is considered more practical, as it is semi-ready and does not require a refrigeration chain for storage, distribution and marketing. One of the problems still faced in the sector is the difficulty of storage and cooling (for the sale of fresh fish), in addition to the search for new markets that can eliminate middlemen, guaranteeing fairer prices to the communities and valuing the preservation of the Amazon’s natural resources . Finally, a brine-based topping is added. 👅 Everything is used – even the tongue: no part of the arapaima is thrown away in fish farming. The meat of the species has a greater use of 50% of the carcass, skin, scales, in addition to the tongue, and with high added market values. Leather, for example, can be turned into a bag, and its residues are processed for animal feed. 🌳 Preservation of the Amazon: 20 years ago, pirarucu was at risk of extinction because of predatory fishing. During this period, management plans were consolidated, reversing this situation.
