New bar in SP has drinks with confectionery garnish – 10/19/2023 – Bars and nightlife

Drunks, a new bar located on the mezzanine of Osso São Paulo, in Itaim Bibi, west region, opened on Wednesday (18). The restaurant’s menu features signature drinks, all with confectionery garnishes, and Japanese-inspired snacks.

Furnished with sofas and armchairs, the bar seats 60 people in a dimly lit environment that plays music at a volume that allows conversations without raising your voice.

Drunks is run by Marlon Silva, bar chef, and Cassiano Oliveira, chef de cuisine, in partnership with Guilherme Mora, partner of the Osso, Incêndio and Cór restaurants.

The two chefs have previously worked at Guilhotina, which was on The World’s 50 Best Bars list. Now, they create both the house’s cocktails and aperitifs together.

“The customer will try a drink that contains, for example, a syrup prepared by a bartender, perfected by a chef and finished with the technique of a confectioner”, says Silva.

On the alcohol menu, in addition to a description of all the ingredients, the customer will find characteristics of the drinks: alcohol content, smoothness, bitterness, freshness and sweetness.

Among the softest is Eu Juro que é o Último (R$52). Made with a blend of rums with noisette butter, it combines flavors of plantain with Tahiti lemon and vegan milk. To be eaten before drinking, the garnish is a banana mousse covered in cocoa butter.

Mr. Drunks (R$55), dyed black with activated charcoal, is another original option. It uses almond bourbon, mezcal, aquafaba and passion fruit nectar in an earthy texture. A blackberry and mint cone complements the cocktail.

For chocolate lovers, the choice is the Take the Bitter (R$50), a reinterpretation of a negroni without campari, which uses a mini cocoa cigar with ganache to balance the bitterness of the gin, amaro and sherry.

In line with those who favor the flavor of the distillate, Cariñito (R$50) features tequila with grilled pineapple syrup to be drunk with a tres leches sponge cake.

The non-alcoholic option, Solo Más Uno (R$ 38), has a refreshing and fruity profile of cantaloupe melon combined with Sicilian lemon and mint.

On the appetizer list, limited to focus on drinks, the restaurant offers raw fish, such as fried rice balls with tuna or salmon mousse (R$42) and mini burgers with sherry mayonnaise, gouda and red cabbage pickles (two units, R$39).

For vegetarians, the choice is the zucchini flower stuffed with goat cheese, chestnuts and honey, which costs R$42.
