Chef Nelsa Trombino, founder of Xapuri, one of the most traditional restaurants in Belo Horizonte, died this Tuesday, the 30th, at the age of 84. The information was disclosed on the social networks of the Minas Gerais house this Wednesday (31). The cause of death has not been reported.
Better known as Dona Nelsa, the cook became one of the references in Minas Gerais gastronomy. She was born in Cubatão, in São Paulo, in 1938, and moved to Minas Gerais. She started cooking for friends and relatives until she founded the wood stove food restaurant in 1987, in the Pampulha region.
In an interview with Sheet, in 2007, she said she moved to Minas after she got married. “I went to live on my father-in-law’s farm, in Lagoa da Prata. There, I experienced the Minas Gerais tradition inside a beautiful farm, with a huge orchard. I really learned the Minas Gerais culture, the way to kill a pig, to make sausage, with cut meat, not ground,” he said at the time.
His eldest daughter then recommended that he open his own restaurant. “We made a small kiosk, a tiny kitchen, a terrible sink, a wood stove and two little tanks. It was a kiosk for 30, 40 people. Word of mouth, one told the other where the restaurant was”, she said. .
The restaurant, which features a menu of typical dishes from Minas Gerais, was expanded and became one of the most popular in Belo Horizonte. Xapuri means gentle river and was inspired by the name of a relative’s property. Dona Nelsa’s story is also told in the documentary “A Dona do Tacho”, directed by Marcelo Wanderley and released in 2021.
In 2013, when Dona Nelsa started having health problems, the management of the business was passed to her son, Flávio Trombino, who continues to run the address.
The restaurant will not work this Wednesday. He returns to receive customers on Thursday, June 1st.
A farewell ceremony will be held this Wednesday at Ceremonial Raja, in the capital of Minas Gerais, from 4 pm to 8 pm. Dona Nelsa is survived by three children and four granddaughters.
