Minas Fresh Cheese Skewers with Zucchini and Fresh Herbs
Ingredients
200g of fresh Minas cheese
1 medium zucchini
2 tablespoons extra virgin olive oil
2 minced garlic cloves
A handful of fresh herbs (basil, parsley, thyme, etc.) chopped
salt to taste
Skewer sticks (wood or metal)
Method of preparation
Cut the zucchini into thin slices lengthwise.
Cut the fresh Minas cheese into medium-sized cubes, about 2 cm.
In a small bowl, combine the chopped fresh herbs, minced garlic, olive oil and a pinch of salt. Reserve.
Take a slice of zucchini and place a cube of fresh Minas cheese on the end. Wrap the zucchini slice around the cheese, forming a kind of roll. Repeat the process until all the cheese cubes are wrapped in the zucchini slices.
Season with the herb oil and grill for about 3 minutes each side over high heat, until toasted.
