A real cheesecake has to be velvety, light and with a touch of acidity to contrast with the intensity and creaminess of the cheese. The structure of the candy has a crunchy base underneath and a fruit syrup or compote on top.
Chef Bru Calderon’s recipe is a version with guava paste made in up to an hour in the airfryer. The preparation begins in the blender, to beat the cornstarch biscuits and cream cheese, and ends on the stove, to make the syrup. See the step by step.
CHEESECAKE ON AIRFRYER
Performance: 6 servings
Preparation time: one hour
Ingredients
- 1 package of cornstarch biscuits
- 1 tablespoon cinnamon powder
- 1 can of condensed milk
- 1 cup of water
- 100 g of melted butter
- 220 ml of milk
- 3 eggs
- 600 g of ricotta
- 3 tablespoons of butter
- 150 g of guava
Preparation
- Put the cookies and cinnamon in the blender and blend until it becomes a farofa.
- Pour into a bowl and add the melted butter. Mix well with hands
- Place the mixture in a mold with a removable bottom (no need to grease it) and spread it out by pressing with your hands until you cover the entire bottom.
- In the blender, place the milk, eggs, ricotta, condensed milk and three spoons of butter and beat until everything is incorporated.
- Pour into the mold and place in the airfryer at 150°C for 40 minutes.
- When the sides are harder and the middle is still soft and wobbly, it’s good, you can turn it off. Let it cool completely
- In a frying pan, place the guava paste cut into pieces and the water, turn on low heat and stir until it turns into a thick syrup. Pour over the cold cheesecake and it’s done!
