Kitchen: learn how to remove the skin from peppers – 03/24/2023 – Food

The taste and texture of the bell pepper are transformed when the skin is removed: it becomes softer and the taste is less intense. Thus, it manages to please a greater number of more people.
Today, there are peelers capable of removing the skin from the ingredient — they are similar to those that remove the skin from potatoes, but with small spikes that eliminate the surface.
If you don’t have it at home (or intend to buy the peeler), another way to remove the skin from the peppers is to singe it and muffle it afterwards.
In this way, the pepper gains a smoky flavor and a more tender texture, which is delicious in contrast to its mild sweetness, recalls Carlos Siffert, professor at the Wilma Kovësi School of Cooking and one of the authors of “400 g: Cooking Techniques” (Companhia Editora Nacional; 400 pages).
It can be used in sandwiches, salads, pasta and as an element to add flavor to recipes.
See how to do it below
- Wash the peppers and dry well. Stick it on a fork and place it on the burner so that the pepper is exposed to the flame. Use low heat and be careful that the fork is not directly in contact with it. Gradually turn the pepper so that it is scorched on all sides.
- When this happens, remove from heat and allow to cool slightly, until it can be handled without burning your hands.
- Place the peppers inside a plastic bag and tie, muffling the heat formed. You also put it on a platter and cover it with plastic wrap. Leave for about 30 to 40 seconds until the volume formed by the heat begins to decrease
- Rinse under running water and remove the skin with the help of a serrated knife.
- If you need to peel a lot of peppers, you can also roast them in a greased or non-stick pan over medium-high heat for about 30 minutes or until they are toasted. Before, brush oil on the peppers. Remember to turn them over to make sure they are browned on all sides. After that follow step 3
