One of the arguments mentioned for the high quality of the coffee is that the jacu only feeds on the best fruits, those that are already very ripe. Thus, with this selectivity made by the bird, coffee would already have greater potential.

It turns out that this work can be done even more accurately by humans. There are farms in the mountains of Espírito Santo that carry out a selective harvest so meticulous that the farmer spends more than 10 times per harvest on the same coffee tree, in order to harvest only the fruits that are in perfect state of maturation.

In addition, there is an ever-increasing supply of fermented coffees, which provide exotic flavors to the drink without the beans having to pass through the digestive system of any bird.

However, the sustainable origin of the process must be recognized. It all started when the birds began to cause problems for the plantation, as they ate the fruits and even destroyed coffee tree branches.

So, instead of trying to fight the animals and expel them from their natural habitat, the farm decided to take inspiration from the coffee that was produced in Indonesia from the feces of the civet –a small mammal– and thus take advantage of the situation. and elaborate an exotic coffee with high commercial value.

In short, if you have financial conditions and want to try the exotic coffee from poop in the jacu to have a story to tell at the bar table, it’s worth it, because you’ll certainly drink a good coffee.

But if you are only interested in the flavor and are looking for a coffee with fruity notes and plenty of sweetness and acidity, the market is full of much cheaper and better options – some even produced in the same region, perhaps on the same farm.
