Healthy food was the theme of the first class-show by Bom Gourmet in partnership with RPC at ExpoApras, a trade fair promoted by Associação Paranaense de Supermercados (Apras), which started today (18th) and runs until April 20th. Aline Moser, guest chef, showed that healthy food doesn’t even have to be complicated, difficult to make or tasteless. In the inaugural class, the chef taught how to make a date truffle with cocoa and cardamom, without adding sugar.
Dessert is part of a gastronomic trend that continues strong, which is food that is good for you, with less sugar and ultra-processed. In the show-class, chef Aline Moser stated that eating healthy is synonymous with using natural ingredients. “I always talk about live food, the more vegetables the better, and not using anything industrialized”.
“Real food, healthy food is natural food. It’s the basics that come from the earth, meat, animals, plants, vegetables”, he commented.
For the chef, eating healthy is directly linked to a healthier life, which ranges from choosing organic and sugar-free foods to avoiding waste, reusing all the ingredients you can.
“Functional cooking prioritizes bringing more benefits from food to our health, preventing diseases, improving sleep and the functioning of the organism as a whole. That’s why the term functional cuisine, which is, for us, using food beyond the vital function, which is to feed us. The intention is that it nourishes our body in the right way”.
According to the chef, the food that is good for you is the one that has less sugar, more natural products and nutritional benefits. In the show-class, Aline Moser, explained that while in the traditional truffle the main ingredient used is condensed milk, in the healthy truffle, the date is used to thicken and sweeten.
“In addition, cashew nut flour is a natural, healthy ingredient, rich in fiber and vitamins and also helps in the functioning of the intestine and in the prevention of premature aging. Cocoa has numerous benefits, it has no sugar, and cardamom, which is a spice, gives this wonderful flavor.
“It has nothing to do with the traditional truffle,” he says.

Date truffle with cocoa and cardamom
Aline Moser
Ingredients
- 8 dates
- 2 tablespoons unsweetened cocoa
- 1/2 cup cashew nut flour
- 8 cardamoms (use only the seeds)
- 200 g unsweetened white or dark chocolate (flavor optional)
Method of preparation
- Soak the dates in water for 2 hours.
- Blend the pitted dates, cashew nut flour and cardamom seeds in a food processor until it becomes a moldable dough.
- Let it freeze for 30 minutes.
- Roll the truffles.
- For the topping, melt the chocolate.
- Dip the truffles in the topping.
- Place to freeze for 2 hours.
