Gastronomic experience of the Food Culture Map in Curitiba

A long table, pieces of sponge cake as a base and products with a Geographical Indication seal to use as a filling. It was with these elements that the Food Culture Map carried out the project’s first gastronomic experience.
The event took place at the Elderly Persons Rights to Life Center last Saturday (27) and is part of the social actions provided by the Food Culture Map to restore the proximity of the population with the products that are the basis of our food roots. The entire project is carried out by Montenegro Produções with resources from the Culture Incentive Law, of the Ministry of Culture.
In the first gastronomic experience of the Food Culture Map, 20 elderly people were able to bake, decorate and taste sweets while chatting. Two grandchildren accompanied their grandparents in the dynamic and were able to hear stories and memories of their elders.
On the table, strawberries from Sapopema, molasses from Capanema, grapes from Marialva, guava from Carlópolis, banana candy from Antonina and cheese from Witmarsum were the ingredients with Geographical Indication available for participants to bake their cakes and remember their taste memories and recipes family’s. There were those who bet on the traditional combination of cream with strawberries and molasses and cheese, while others preferred just the taste of local fruits.
What really involved everyone were the memories. Old and new, they rocked the conversation among the elderly. “My son-in-law plants a banana in Antonina, it was really cool to learn that the banana candy and Antonina are part of this project”, said Esmeralda Félix da Fonseca. She said that all her family recipes involve bananas and she sent Good Gourmet his banana cuca recipe (read at the end of the article).
For Erica dos Santos, born in Londrina, it was Marialva’s grapes that awakened memories. “I identified with the grape, because I remembered the first time I saw a grape cuca in Marialva and I found this cultural variation very striking.”
About the project
The Food Culture Map is a project that seeks out the faces and identity of those who make and preserve the products that are part of the food roots of Paraná and part of Santa Catarina. For this, it used products with Geographical Indication as a compass.
It was based on these products that, during the month of April, a multidisciplinary team assembled by Montenegro Produções hit the road to visit 12 locations and meet producers and know-how related to each of the 12 products with GI. The project has resources from the Culture Incentive Law, from the Ministry of Culture, and has the support of Good Gourmet.
The initiative is now entering the phase of transforming the field research into a printed book and a visual arts exhibition. Book and exhibition launches are scheduled for September 2023.

Esmeralda’s Banana Cuca
Ingredients
- 3 cups wheat flour
- 1 cup (American type) oil
- 2 cups (American type) crystal sugar
- 2 eggs
- 2 tablespoons of butter
- Sliced bananas dipped in cinnamon sugar (as much as needed)
Method of preparation
- Mix wheat with oil, eggs and half (a glass) of sugar.
- With the rest of the sugar (one cup), mix with the butter to make a sweet farofa and set aside.
- Grease a mold, place the bananas with sugar and cinnamon in the bottom, pour in the dough and finish with the sweet farofa lumps.
- Bake for 40 minutes in medium oven.
