A piece of meat, usually beef brisket, undergoes curing with different seasonings and hours of smoking to become a favorite ingredient among chefs and customers: pastrami. Meat is the main element of the new preparations that will be part of the Fôrno restaurant menu from October 3rd. This year, the house won the best sandwich category at O Melhor de São Paulo, from Sheet.
The campaign, which is called “House of Pastrami”, compiles recipes that the house served over six years of operation under the command of chef Fih Fernandes. For him, the place works as a kind of embassy for lovers of this type of charcuterie in the city of São Paulo.
New items on the menu include pastrami drumsticks (R$42) and rice cakes —with shredded pastrami— (R$99) among the starters. Moving on to the main dishes, the restaurant serves a hot dog version with shredded pastrami made on pizza dough (R$99), a hamburger with shredded meat in the filling and fries to accompany (R$56), as well as more than one pastrami sandwich option.
From the same partners as Holy Burger, the restaurant is located in the center of São Paulo and is well known for offering casual cuisine, with influences from several countries. Every month, almost 3 tons of pastrami are produced in the on-site kitchen. In addition, natural fermentation pizzas, fresh pasta, vegetarian dishes, artisanal sausages, sandwiches with four types of bread made in-house are served – focaccia, ciabatta, brioche and campagna.
