Do you really know what a diet is? plant-based And how does this consumer behavior impact the gastronomy business? At the beginning of 2020 – just before the Covid-19 pandemic arrived and stopped the world for almost two years -, the columnist for Good Gourmet and gastronomy business specialist, Jussara Voss, started a series of videos in which he explained trends that were already noticeable at the time and that would certainly impact the sector.
And the first episode of the series was precisely about the diet plant-based. The unpublished video that Bom Gourmet rescued and now makes available on its Youtube channel is just over five minutes long. In this, Jussara presents the concept plant-based and brings a historical overview of what at the time was already considered an eating behavior that would impact the gastronomy business. Now, three years later, what we see is that the trend has grown.
At the last RNA Show in Chicago, one of the world’s biggest events for the food service sector, the industry showed how far it has advanced in this regard. Sushi and egg based on chickpeas and soy protein were some of the novelties presented at the fair in 2023.
