Festa Junina: learn how to make traditional rice pudding – 06/04/2023 – Food

With many possible combinations, rice pudding is one of the most successful recipes in the Festa Junina season that has just arrived.

Heloísa Bacellar, from the blog Na Cozinha com Helô, teaches the classic recipe with the affectionate nickname of “grandmother’s rice pudding”.

Brought by the Portuguese, the dessert is also found in France, known as “riz au lait” , and in Mexico, as “dulce con leche” rice.

TRADITIONAL SWEET RICE

Yield: 6 servings
Preparation: 45 minutes (+ two hours to chill)

Ingredients

  • 2 cups of water (tea)

  • 1 wide strip of orange peel without the white part

  • 1 wide strip of lemon peel without the white part

  • 1 piece of about 2 cm of cinnamon stick

  • 2 carnations

  • ¾ cup of white rice (tea) well washed and drained

  • 1 and ½ cup of milk

  • 1 cup of sugar

  • 1 teaspoon natural vanilla essence

  • 1 yolk

  • 1 tablespoon sugar

  • 1 tablespoon chilled butter

  • Cinnamon powder for sprinkling

Preparation

  • To start, in a medium pan, heat the water, the orange and lemon peels, the cinnamon stick and the cloves.

  • When it boils, count one minute, add the rice and cook with the pan partially covered for about 15 minutes, until the grains are soft.

  • Then, lower the heat, add the milk and sugar and cook for another 20 minutes, until a thin, slightly shiny cream forms that covers the back of the spoon in a thin layer. Scratch with your fingertip to test. It is essential not to let it thicken too much, as it firms up after cooling down. Discard the orange and lemon peels, cinnamon and cloves.

  • While the rice is cooking, mix the vanilla, egg yolk and sugar in a small bowl until you get a paste, set aside.

  • When the rice thickens, add this paste and the butter to the rice pudding pan and mix for another 3 to 5 minutes, just until it boils again and thickens.

  • Remove rice pudding from heat and transfer to serving bowl.

  • Let cool for two hours at room temperature and serve, or refrigerate for up to two days if serving chilled.

  • Sprinkle with cinnamon when serving
