Researcher Fábio Bitelli, co-author of the article “Feijoada: origin and considerations about a cultural and intangible heritage”, explains that, in the 19th century, pork giblets were delicacies consumed only by the richest. “We are talking about a period in which there was a great scarcity of food. In European food culture, offal are treated as premium ingredients, with the highest quality reference”, explains the researcher. The basic food of enslaved people, in turn, was beans and flour. According to the researcher, the most likely place for the creation of feijoada was the city of Rio de Janeiro, as it was the capital of Brazil at the time and concentrated many Portuguese habits. Furthermore, the city had a greater availability of food, which arrived by sea.
