The Fermentation Masterclass, with Sandor Katz, takes place on April 28, at the Pontifical Catholic University of Paraná (PUCPR), Carlos Costa auditorium (green block). Katz, considered one of the leading experts in the process, will talk about the different ways to carry out fermentation and their advantages. Seats are limited, and tickets can be purchased through the event’s website. The price is BRL 125 for students and BRL 225 for full members.

Sandor Katz is the author of the book “The Art of Fermentation”, and was considered the main “provocateur, agitator and opinion former” of 2009, by the culinary website Chowhound. The event is a partnership between PUCPR and Bora Fermentar, in celebration of the 15th anniversary of the university’s gastronomy course. On the occasion, there will be an autograph session and a gastronomic fair.
