Eva dos Santos will leave Quintal do Porco: chef prepares new projects

“It’s time to follow my dreams.” The statement is by chef Eva dos Santos, elected Chef 5 Stars in 2022 by the Bom Gourmet Award, a title she also won in the 2012 to 2017 editions of the most important award in Paraná cuisine. Currently in charge of the kitchen at the Quintal do Porco restaurant, Eva is getting ready for new projects.
“My dream is to work with what I like, in my own way, in my place, in my own restaurant. I’ve always worked on other people’s projects and I’m very grateful for all the opportunities I’ve had. But now I want to do something the way I do. I believe it. My plan is to open a restaurant on the beach, in São Francisco do Sul (SC)”, he says.
While the restaurant on the beach does not come, Eva is preparing to share her knowledge of Brazilian cuisine. Soon, she will give a special class at Inspirar Gourmet and is already talking to other gastronomy schools in Curitiba for new courses. Consultations for restaurants outside the city are also on the chef’s agenda.
Coming from the interior of Paraná, Eva dos Santos started cooking professionally in the 1990s. .
With Brazilian cuisine and grilled dishes as her hallmark – a technique she perfected after a season in 2017 at the award-winning Asador Etxebarri, in the Basque Country – , Eva left the chain, a reference in seafood, in 2020. At the time, the idea it was already about having a development on the coast of Santa Catarina, where he owns a house.
But the following year came the challenge: a restaurant specializing in pork. And she took over the kitchen at Quintal do Porco, a venture by businesswoman Clemilda Thomé located in a large house in the Mercês neighborhood. One of the hallmarks of the house’s menu is the acarajé stuffed with ham and chili pepper vinaigrette, a dish with the signature of Eva dos Santos.
The chef will stay at Quintal do Porco until the end of June. Sought by the report, the management of the restaurant reported that the request for the shutdown came from Eva herself and that she respects the decision.
