Egg Day: Learn a simple ravioli recipe with yolk – 10/13/2023 – Food

Celebrated on Friday, World Egg Day has resulted in different promotions in restaurants around São Paulo. At Temperani Cucina, located in the Vila Anália gastronomic complex, in Jardim Anália Franco, east zone, the star of the night will be the egg yolk ravioli, which also includes ricotta and fresh spinach.
For those who decide to make the delicacy at home, the recipe is simple and takes no more than 30 minutes to prepare and can serve up to two people. Check out the complete recipe for Egg Yolk Ravioli from chef António Maiolica below.
EGG YOLK RAVIOLI
- Yield: 2 servings
- Preparation time: 30 minutes
INGREDIENTS:
- 1 egg yolk
- 200 grams of flour
- 2 eggs
- 100 grams of ricotta
- 100 grams of fresh spinach
- 10 grams parmesan
- Salt to taste
- Nutmeg
PASTA:
- Mix the 2 eggs with the flour and form a well-mixed ball and let it rest for 30 minutes.
FILLING:
- Saute the spinach with a little butter until the water dries up and leave to cool. Mix with the ricotta and parmesan and adjust with salt. Put everything in a piping bag
METHOD OF PREPARATION
- Roll out the dough into a cylinder until the desired thickness;
- Assemble two equal squares measuring 10 cm on each side;
- Add the ricotta in the middle of the circular shaped square, leaving a hole for the egg yolk;
- Place another dough on top and remove the air from the filling with your hand;
- Using a fork or a rolling pin, close the sides of the ravioli.
- Cook in boiling salted water for three minutes – be careful not to pierce the dough.
SAUCE
- Fry butter with a little parsley;
PLATING
- Place the ravioli on the plate with the butter on top and just serve.
