A kilogram of socol costs, on average, R$ 130. “Initially, socol was a way for us to keep the meat without spoiling, at a time when our ninth [avós e avôs] they didn’t have a refrigerator to store it”, says socol producer Lorenzo Carnielli. “Later, people started to realize that the flavor was incredible and the rural producer, we, at that time, [percebemos] an opportunity to produce”, he adds. In Brazilian lands, the word was translated into Portuguese and became “socol”. The change was not just in the name. The delicacy started to be made from another part of the pig: the loin, which has a lighter meat and less fat than the neck. Two stamps helped to make socol unique: the Geographical Indication Seal (IG) and the Art Seal. With the IG, only ten families in the municipality of Venda Nova do Imigrante are authorized to sell it. Then, with the arrival of Selo Arte, it started to be sold all over the country.
