Confeitaria Xaví closes its doors and owner announces new projects

Confeitaria Xaví, a reference in Choux in the city, closes its doors on March 18th. The news released on the establishment’s social media took customers by surprise. The owner, Paula Xavier, explained to Bom Gourmet the reasons for the closure of activities.
Opened in January 2022, Xaví is another one of those ventures that come from word of mouth. Prevented from returning to Paris during the pandemic, the chef Patissier, formed by Le Cordon Bleu – London, started selling Choux to friends. Sales grew, the pandemic passed, and the high demand for the product culminated in the opening of Confeitaria Xaví.
But the exhausting routine and the difficulties of having a business with fresh products every day, ended up putting Paula’s plans in a stasis.
“I really want to work with gastronomy in other formats, with courses, consultancies and research. But the confectionery held me back and it would be unfeasible to follow the projects with open doors”, he explains.
Paula claims that she managed to win the hearts of many customers, who are super loyal, with whom she has a close connection. “I was very sincere in announcing the closure, people were sad, but they understand”, she says.
Winner of the 2022 Bom Gourmet Award, in the “to keep an eye on” category, chef Patissier plans are already well structured and the news should be announced in the second half. “I already have a busy schedule, I continue with the consultations and preparing myself for the next steps”, he warns.
