The current Brazilian champion of Barismo, Boram Um, from Um Coffee Co., is already preparing to compete in the world championship, at the end of June, in Greece.
The World Barista Championship, which annually recognizes the most complete barista (specialist in coffee preparation) in the world, has existed since 2000 and has never had a Brazilian as a winner.
One of the first winners of the disputed competition was the Norwegian Tim Wendelboe, today considered a world reference not only in the preparation, but also in the roasting of specialty coffees.
Competitors have 15 minutes to prepare 12 coffees: four espressos, four with milk and four drinks that represent the professional’s signature.
In Canada, from where he spoke via video call with coffee in the pressBoram explained that training for this type of competition is almost like that of high-performance athletes – in the month before the competition, he trains 12 hours a day.
As time is short and the level of demand is very high, it is necessary to be fast and well structured, says Boram, who is Brazilian with South Korean descent. “People joke around saying it’s like a coffee Olympics,” he says.
Therefore, competitors have a team that helps them during the training phase. These professionals help the competitor with matters such as choosing the beans and extracting them (that is, the preparation of the drink itself).
The World Barista Championship 2023 will be held in Athens, as part of the World of Coffee, a global specialty coffee event that will take place from June 22nd to 24th.
To compete in the world cup, you have to win the national competition – a feat that Boram has already achieved three times.
This year, however, the barista claims to be more prepared. “We believe that we are very close to a first Brazilian title in the world”, he says.
