Coffee: Boram Um conquers the World Barista Championship – 06/24/2023 – Café na Prensa

The Brazilian Boram Um, from the São Paulo coffee shop Um Coffee Co., made history and won this Saturday (24) the unprecedented title in the most important competition in the coffee world, which this year took place in Athens, Greece.

The World Barista Championship (WBC), which annually celebrates the most complete barista (specialist in coffee preparation) in the world, has existed since 2000 and has never had a Brazilian as a winner.

Despite being the world’s largest producer, the best result in Brazil had been sixth place in 2007, achieved by barista Silvia Magalhães.

In the WBC, considered a kind of coffee Olympics, competitors have 15 minutes to prepare 12 coffees: four espressos, four with milk and four drinks that represent the professional’s signature.

Boram gave a presentation highlighting the teamwork involved in making coffee.

In conversation with coffee in the press last month, when preparing for the competition, Boram explained that training for this type of competition is almost like that of high-performance athletes – he trained 12 hours a day.

Boram’s brother, Garam Um, was third in the World Brewers Cup (WBrC), which elects the best in the preparation of strained coffees. It was also Brazil’s best result in history – before it, the country had only reached fifth place.

Garam won bronze serving a blend of beans grown in Panama and Colombia.

The winner of the WBrC was the Chilean Carlos Medina, a result considered surprising, since the South American country does not have much tradition in the coffee world. The runner-up went to Savina Giachgia, who represented Greece, host country of the event.
