Alongside Easter eggs, cod is the gastronomic star of Holy Week. Preparing the ingredient is not difficult, but it requires attention to processes.
See below four different ways of preparing cod: from the traditional à bras to a version that uses less noble parts of the fish, and allows you to escape the salty prices of fish, whose kilo already reaches R$ 300.
Brazilian codfish
In this recipe, signed by the author of the book “Bacalhau – Recipes and Stories from Águas Geladas à Caçarolas” (ed. DBA), Heloisa Bacellar, potato straw gives way to cassava, which is grated, washed, dried and fried in hot oil. As the preparation calls for fish meat in flakes, the chef recommends using the Norwegian species saithe and zarbo, which are alternatives that are up to 50% cheaper than the Good morningas codfish is officially called.

When cod Oven
Simple and very classic, this recipe is prepared with cod loin, the noblest part of the fish. In addition to this ingredient, tomatoes, potatoes, olives and onions are baked in the oven, all drizzled with olive oil. Because it doesn’t involve complicated steps, it’s ideal for those who are starting in the kitchen or don’t have much time available. It is ready in an hour and a half, including the preparation of a farofinha.

Cod with cream
An option for those who want to vary the classic recipe for baked cod with potatoes, traditional for Easter. In this version, cod with cream can be made with frozen cod fillet, fresh cream and gruyére cheese —but mozzarella works just as well!

Traditional codfish
In this preparation, one of the most traditional in Portuguese cuisine, you can learn two tricks so you don’t end up with cod scrambled with eggs. First, you need to beat the eggs with the milk well, paying close attention to the heat of the pan to turn off the heat at the right time; then add the potatoes only at the end of the whole process and serve immediately.
