Chef Bruno Muller launches line of cakes for June parties

According to the chef, the line was thought of uniting the tradition of the parties in the Amazon and the practicality that people want for their day to day.

Born in Novo Hamburgo, in Rio Grande do Sul, chef Bruno Muller has been standing out in an area that is starting to grow in Manaus: the freezing of bakery and confectionery products. He is responsible for creating bakery and confectionery items for Natan Congelados, an Amazonian industry specialized in this area.

Since childhood, Bruno helped his mother and brothers in making bread, cakes and snacks. At age 17, he started working as a baker and confectioner in Novo Hamburgo. At the age of 19, he was invited to be a baker at Sonho Real, in Cascavel, Paraná. It was there that he became interested in the area of ​​frozen bread.

“The possibility of making manufacturing more efficient, without losing quality, called my attention”,

Bruno points out that the idea that frozen products do not have the same flavor and texture as freshly made products is completely outdated.

“Technology and techniques have evolved a lot over the years. Today, it is possible to deliver a quality product to the consumer, with the advantage of practicality and time savings”,

At the age of 21, Bruno moved to Buenos Aires, Argentina, where he studied Gastronomy and later specialized in baking and confectionery. Since 2021, he has been responsible for the creation and production of Natan Congelados.

For Bruno, technology is an important ally in the manufacture of frozen products. Natan, for example, has ultra-freezers that keep the product as natural as possible. All recipes are created by Bruno and tested by the team, one by one.

“Together with technology, we developed a very intense research work, identifying the raw materials that best suit the needs of the products, the appropriate recipes, types of conservation, among other issues”,

Launch – Bruno is always looking for innovation. For the month of June, he is preparing the launch of a line of cakes for June parties, signed by Natan Congelados. He explains that the idea is to offer people, in a practical way, traditional products of the period, such as cassava, corn and tapioca cake, as well as cupuaçu, tapioca and milk pudding.

“Our proposal is to rescue the affective memory, bringing flavors that everyone likes to the celebrations”,

Also in June, other novelties will be launched by Natan Congelados, such as confectionery cakes, in the flavors of brigadeiro, three milks, prestige, red velvet and brigadeiro with cupuaçu, in addition to donuts and dreams.
