O Good Gourmet exclusively followed chef Manu Buffara’s trip through Castilla-La Mancha at the end of September this year at the invitation of 50 Best Explores. The chef from Paraná is the star of the second episode of the series produced by the editorial arm of the famous list The World’s 50 Best Restaurants. In the series, chefs from different parts of the world are invited to explore this special area of Spain.
Located in the central region of the Iberian country, Castilla-La Mancha is recognized for its high quality products that are part of the Spanish culinary tradition. Some examples of these products are Manchego cheese, olive oil, saffron and the region’s own red wines.
In this episode of the series, Manu explores the landscapes and restaurants of the southern portion of the Castilla-La Mancha region. Bom Gourmet accompanied the chef on the five-day journey that passed through the provinces of Ciudad Real and Albacete and got to know the work of starred chefs who show how the appreciation of local products and improved techniques are key to haute cuisine.
