Perfect with a beer, bolovo is a traditional delicacy in Brazilian bars. It consists of a combination of a boiled egg wrapped in ground meat that is breaded, fried and, if all goes well, served with the yolk still soft, like a sauce.
In São Paulo, the snack can be found in different versions: from the simplest, which cost between R$ 11 and R$ 23, to sophisticated versions, such as Rabo di Galo, where it is served with caviar and costs BRL 135.

CROCANT BOLOVO
Preparation time: up to 30 minutes
Performance: 3 servings
Ingredients:
- 1 kg of ground meat
- salt to taste
- Black pepper to taste
- Turmeric to taste
- paprika to taste
- nutmeg to taste
- farofa to taste
- parsley to taste
- 4 boiled eggs
- Wheat flour
- Panko Flour
Method of preparation: Cook three eggs for 7 minutes and set them aside. In a container, mix the ground beef with the salt, black pepper, turmeric, paprika, nutmeg, parsley and farofa, which will give the dough a crunch. Take the eggs individually and cover them with the dough made with the meat, then bread in wheat flour, beaten egg and panko flour. After frying them in hot oil, you will have delicious pub food.
