April 24th is celebrated as Barbecue Day. And in Brazil, barbecue is a very important tradition, with a history that goes back to indigenous peoples, who already roasted meat on bonfires long before the arrival of European colonizers.
From the 19th century, meat became one of the main sources of food in the country and, over time, the barbecue became a symbol of Brazilian culture.
Nowadays the barbecue is one of the most common social events involving friends and family gathered around the barbecue and, with the evolution in tastes and personal preferences, everything goes hot, even dessert.
Thinking of pleasing all tastes, grilled vegetables and mushrooms go very well as a starter or as a main character. Choose meatier mushrooms, such as portobello, shiitake and eryngui and, for vegetables, zucchini, eggplant, onions and peppers – it’s easy to find in any market.
I like to make a seasoning based on olive oil, garlic, thyme and rosemary, in addition to salt and freshly ground black pepper. Make this marinade and let them get seasoning for at least 30 minutes.
As for carnivores, have a selection of meats, including the leanest, such as chicken, which can be a boneless drumstick, even a picanha with a good layer of fat. Sausage cannot be missing, and pork can be served as a rib or a very tender filet mignon.
To snack, invest in a well-seasoned chicken heart and a strip roast.
Accompaniments such as rice, vinaigrette, potato salad and farofa, as long as they are prepared with plant-based ingredients, please everyone.
And finally, it is important to be careful when preparing food and to avoid cross-contamination.
Be sure to use separate utensils for preparing and serving meat and vegetables, as well as separate grills or separate grill areas.
There is no reason to leave anyone out of this celebration!
