Animus makes dinner inspired by Brazilian biomes in SP – 05/15/2023 – Comida

The Animus restaurant, in the west zone of São Paulo, offers a tour of Brazilian biodiversity through aromas, flavors, textures and colors. This is the proposal of the Biomas dinner, which takes place this Wednesday (17), at 7:30 pm.
Conceived by chef Giovanna Grossi, in partnership with importer Tuadega, the six-course menu features a pairing that goes from sparkling wine, to white wine and to red, with labels from small Brazilian producers.
Dinner consists of recipes that value vegetables in their seasonality and that translate the characteristics of their place of origin. An example is the dish named Atlantic Forest, with grilled peach palm, toasted onion purée and mandala cheese.
Sommelier Leandro Fernandes curates the drinks. The wines O Don Guerino Vintage Torrentés 2022, from Serra Gaúcha, and Maria Maria Glória Syrah 2021, produced in Minas Gerais, are two of the labels selected by him.
